This Week's Featured Recipe - 3
This week's recipe is another family favorite. It's from a wonderful site called Italian Food Forever. The woman who runs the site is Deborah Mele and every recipe on here that I've tried has been very good. I have to say that I agree with her “philosophy” as she quotes on her site “Chi mangia bene, mangia italiano!” Which, if my Italian translation is correct, is “He who eats well, eats Italian!” You won't hear me arguing with that!
Her recipe for Chicken Cacciatore is delicious! I've served it as suggested with her Roasted Garlic Mashed Potatoes.
As a variation, I've made this dish for people who don't like mushrooms by substituting the mushrooms with a mix of green and red sweet peppers. It changes the overall taste of the dish but it's still a nice blend of flavors. You can also make this with boneless skinless chicken breasts for a low-fat alternative but you will sacrifice alot in the flavor department with this variation.
