This Week's Featured Recipe - 5
For a change the recipe doesn't come from a book or from a website. This week's recipe is from my cousin Dawn. She is the most amazing cook and once while I was visiting she made a wonderful chocolate cake with white frosting. The chocolate cake recipe you can get off the Hershey's Cocoa Can but the frosting tasted like marshmallows. Dawn made it from scratch and said it was a step or two away from how you'd make homemade marshmallows. Why would anyone do that?
Anyway — here it is
Fluffy White Frosting
1 ¼ c sugar
1/8 t cream tartar
pinch of salt
6 T water
Boil all ingredients together without stirring until it reaches 260 degrees on a candy thermometer. Remove this simple syrup from the heat.
Take 3 egg whites — room temperature — and beat them at high speed until soft peaks form. In a slow stream add syrup, beating at high speed constantly.
Add 1 teaspoon vanilla after syrup has been added and continue beating until stiff peaks form.
Fills and frost 2 layer cake, 9 X 13, or 2 dozen cup cakes
